This garlic scape pesto is packed with flavor and made with fresh ingredients. It’s simple to prepare and perfect for pasta dishes or as a spread.

- 1 cup garlic scapes, chopped
- ½ cup fresh basil
- â…“ cup parmesan cheese, grated
- â…“ cup walnuts or pine nuts, toasted
- ½ cup olive oil
- 1 tablespoon lemon juice
- ½ teaspoon salt
- ¼ teaspoon black pepper
Instructions
- Rinse the garlic scapes under cold water, pat dry, and trim off tough ends. Chop into 1-2 inch pieces.
- Toast walnuts or pine nuts in a dry skillet over medium heat for 3-4 minutes until golden and fragrant. Cool slightly.
- In a food processor, combine garlic scapes, fresh basil, toasted nuts, and parmesan cheese. Pulse until finely chopped but slightly textured.
- While the processor runs, slowly drizzle in olive oil. Blend until the pesto reaches a smooth but slightly thick consistency.
- Add lemon juice, salt, and black pepper. Blend for 10-15 seconds, taste, and adjust seasoning as needed.
- If the pesto is too thick, add 1-2 tablespoons of olive oil or water and blend until smooth and spreadable.
- Use immediately with pasta or sandwiches, or store in an airtight container. Drizzle with olive oil before sealing to prevent discoloration.
Notes
To maintain freshness, always refrigerate any leftovers.
This pesto can be frozen for up to 3 months. Just thaw and stir before use.
