- 1 cup sweetened shredded coconut
- 3/4 cups chopped pecans, toasted
- 1 cup unsalted butter, softened
- 1 3/4 cups powdered sugar
- 1/4 cup unsweetened cocoa powder
- 4 Tablespoons heavy whipping cream
- 1/2 teaspoon vanilla extract
- 1/8 teaspoon salt
Instructions
- In a large saucepan over medium heat, whisk together egg yolks, evaporated milk, vanilla extract, and sugar; heat for about 12-15 minutes while stirring constantly.
- Once heated, remove from heat and mix in shredded coconut and toasted pecans. Pour the mixture into a glass bowl and allow it to cool completely.
Notes
Make sure your butter is softened for easier mixing.
These cupcakes can be made ahead of time and stored, just frost before serving.
For a richer flavor, use brewed coffee instead of hot water.
