Description

This Gorgonzola pasta is a must-try for its rich, creamy flavor and easy preparation. With simple ingredients like gorgonzola cheese and walnuts, it’s perfect for a quick dinner or a comforting meal at home.


Ingredients

  • 8 ounces pasta
  • 2 tablespoons olive oil
  • 1/2 cup walnuts, chopped
  • 1/2 teaspoon salt
  • 1 cup cream
  • 4 ounces gorgonzola cheese, crumbled
  • 1/4 teaspoon black pepper
  • 2 tablespoons fresh parsley, chopped
  • 1/4 cup parmesan cheese, grated

Instructions

  1. Cook your pasta in a large pot of water until al dente, following package directions. Reserve ½ cup of the cooking water.
  2. In a large skillet, warm ½ teaspoon of olive oil over medium heat. Stir in chopped walnuts with a sprinkle of salt, cooking until golden and toasted, about 4 minutes. Set aside.
  3. In the same skillet, over medium-high heat, add cream, diced gorgonzola cheese, and freshly cracked black pepper. Simmer gently, stirring until the cheese melts and blends into a smooth sauce, about 3-4 minutes. Turn off the heat.
  4. Drain the pasta and add it to the skillet, tossing it in the creamy gorgonzola sauce. If needed, incorporate reserved pasta water to achieve a velvety sauce consistency. Mix in half of the toasted walnuts and adjust seasoning with salt and pepper.
  5. Serve warm with a drizzle of extra virgin olive oil, topped with remaining walnuts, fresh parsley, and freshly grated parmesan cheese.

Notes

For added flavor, consider using toasted walnuts or pecans as a garnish.
Ensure the cream is at room temperature before adding it to help the cheese melt evenly.
If the sauce is too thick, adjust with a little more pasta water.
