These Graduation Cap & Diploma Sugar Cookies are a delightful way to celebrate achievements. With simple ingredients like butter, sugar, and chocolate, they are irresistibly delicious and a great addition to any festive occasion.

- 2 cups all purpose flour (plus more if needed)
- 1/4 teaspoon salt
- 1/4 teaspoon baking powder
- 1/2 cup butter (softened slightly)
- 3/4 cups sugar
- 1 large egg
- 3/4 teaspoons pure vanilla extract
- 1/2 teaspoon almond extract
- 16 ounces white chocolate
- 1/3 cup light corn syrup (plus more if needed)
- food coloring (flesh tone and other color for your grad caps)
Instructions
- Preheat your oven to 350 degrees Fahrenheit.
- Mix the flour, salt, and baking powder together in a bowl and set aside.
- Cream the softened butter and sugar until light and fluffy.
- Incorporate the egg, vanilla, and almond extract into the mixture.
- Gradually add the dry mixture, stirring just until combined; add more flour if the dough remains sticky.
- Roll out the cookie dough on a floured surface to about 1/8th inch thickness.
- Cut twelve 3-inch circles from the dough and shape twelve diamond-shaped grad caps.
- Make a triangle-shaped notch out of each circle using the same cookie cutter.
- Brush the notched edges of the circles with corn syrup and attach the diamond-shaped caps, pressing the seams together.
- Bake for 10-14 minutes until edges are set and tops are dry.
- Allow cookies to cool fully before decorating.
- Reserve 2 tablespoons of white modeling chocolate to color for the tassels and color the rest as desired.
- Let the colored modeling chocolate rest at room temperature for 30 minutes.
- Roll the flesh tone modeling chocolate to 1/16th inch thickness and cut out twelve 3-inch circles; do the same for the colored chocolate, making caps.
- Brush corn syrup over each cookie, then place and attach the circles and diamonds.
- Color additional modeling chocolate for tassels; roll into a tube and extrude strands, cutting them into 1-inch pieces.
- Securing the single strands to caps and add multi-holed strands for decoration.
Notes
Ensure your dough is well-floured when rolling to prevent sticking.
You can mix and match colors for the grad caps and tassels depending on graduation themes.
These cookies can be made ahead and decorated on the day of the celebration for freshness.
