Description

Ingredients

  • 4 ears corn
  • 3 tablespoons mayonnaise
  • 1/2 cup sour cream
  • 1/4 cup cilantro, freshly chopped
  • 1/2 cup Parmesan cheese, freshly grated
  • 1/4 cup cotija cheese
  • 1 lime, juiced
  • chili powder, to taste
  • 2 limes cut into wedges, for garnish

Instructions

  1. Remove the husks of the corn, keeping the core attached.
  2. Grill the corn on a hot grill or cast iron pan until slightly charred on all sides.
  3. In a small bowl, combine mayonnaise, sour cream, and cilantro.
  4. Once grilled, take the corn off the grill and apply the mayonnaise mixture using a basting brush.
  5. Drizzle lime juice over the corn, then generously garnish with Parmesan and cotija cheese. Finish with a sprinkle of chili powder and serve.

Notes

Feel free to adjust the chili powder to your spice preference.
Make sure to grill the corn until it is nicely charred for the best flavor.
