Description

This Healthy Grilled Chicken Cobb Salad with Honey Dijon Dressing is packed with flavor and nutrition. Easy to prepare, it features grilled chicken, crisp greens, and a delightful honey dijon dressing—perfect for a quick weeknight meal or a satisfying lunch.


Ingredients

  • 3 Tbsp raw honey (melted if solid)
  • 1/4 cup dijon mustard
  • 2 Tbsp fresh lemon juice or white vinegar
  • 1/4 cup avocado oil
  • 1/4 tsp sea salt
  • 34 boneless skinless chicken breasts (about 1 1/2 lbs)
  • 1 tsp sea salt
  • 1/2 tsp black pepper
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1 Tbsp avocado oil (for the grill or pan)
  • 8 cups chopped romaine (kale, or other greens, or a mix)
  • 3/4 cup cherry tomatoes (halved)
  • 1/2 red onion (thinly sliced)
  • 1 med cucumber (peeled and sliced)
  • 1 large avocado (thinly sliced)
  • 8 slices bacon (cooked until crisp, and chopped or crumbled)
  • 6 hard boiled eggs (sliced)

Instructions

  1. Prepare the dressing by whisking together honey, dijon mustard, lemon juice, and avocado oil in a bowl or blend using an immersion blender. Set aside or refrigerate.
  2. Season the chicken breasts with salt, pepper, garlic powder, and onion powder. Heat the grill or grill pan with avocado oil to medium-high temperature and grill the chicken for about 5 minutes each side, or until the internal temperature reaches 165°F. Set the chicken aside.
  3. In a large serving bowl, layer the salad greens, followed by the cherry tomatoes, red onion, cucumber, avocado, crumbled bacon, and hard-boiled eggs. Slice the grilled chicken and add it on top of the salad as desired.
  4. Drizzle the honey dijon dressing over the salad and toss or serve on the side.

Notes

For a thicker dressing, an immersion blender works great.
Feel free to customize the salad with your favorite vegetables or toppings.
This salad can be made ahead of time; just keep the dressing separate until serving.
