This Healthy Grilled Chicken Cobb Salad with Honey Dijon Dressing is packed with flavor and nutrition. Easy to prepare, it features grilled chicken, crisp greens, and a delightful honey dijon dressing—perfect for a quick weeknight meal or a satisfying lunch.

- 3 Tbsp raw honey (melted if solid)
- 1/4 cup dijon mustard
- 2 Tbsp fresh lemon juice or white vinegar
- 1/4 cup avocado oil
- 1/4 tsp sea salt
- 3–4 boneless skinless chicken breasts (about 1 1/2 lbs)
- 1 tsp sea salt
- 1/2 tsp black pepper
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- 1 Tbsp avocado oil (for the grill or pan)
- 8 cups chopped romaine (kale, or other greens, or a mix)
- 3/4 cup cherry tomatoes (halved)
- 1/2 red onion (thinly sliced)
- 1 med cucumber (peeled and sliced)
- 1 large avocado (thinly sliced)
- 8 slices bacon (cooked until crisp, and chopped or crumbled)
- 6 hard boiled eggs (sliced)
Instructions
- Prepare the dressing by whisking together honey, dijon mustard, lemon juice, and avocado oil in a bowl or blend using an immersion blender. Set aside or refrigerate.
- Season the chicken breasts with salt, pepper, garlic powder, and onion powder. Heat the grill or grill pan with avocado oil to medium-high temperature and grill the chicken for about 5 minutes each side, or until the internal temperature reaches 165°F. Set the chicken aside.
- In a large serving bowl, layer the salad greens, followed by the cherry tomatoes, red onion, cucumber, avocado, crumbled bacon, and hard-boiled eggs. Slice the grilled chicken and add it on top of the salad as desired.
- Drizzle the honey dijon dressing over the salad and toss or serve on the side.
Notes
For a thicker dressing, an immersion blender works great.
Feel free to customize the salad with your favorite vegetables or toppings.
This salad can be made ahead of time; just keep the dressing separate until serving.
