  • 4 lbs medium or large yellow onions
  • 6 tablespoons unsalted butter
  • 2 tablespoons olive oil
  • 2 tablespoons packed dark brown sugar
  • 2 teaspoons kosher salt

Instructions

  1. Cut the onions in half from root to tip and remove the root by cutting a V-shape around it.
  2. Thinly slice each onion half into ¼-inch thick half moons and place them in a large mixing bowl.
  3. In a large, deep pot over medium heat, melt the butter with the olive oil, swirling to coat the pot.
  4. Add a handful of onions to the pot, stirring often until soft and translucent, about 2 minutes. Repeat until all onions are added.
  5. Lower the heat to medium-low and stir occasionally, cooking for 45-50 minutes until onions turn deep brown and jammy, stirring to avoid burning.
  6. Stir in brown sugar and salt, cooking for an additional 5-7 minutes. Remove from heat to cool.
  7. Store caramelized onions in an airtight container in the fridge for up to a week. Use in dips, soups, and as toppings.
