Description

Lasagna Roll Ups bring together the irresistible flavor of beef, ricotta, and marinara sauce wrapped in tender noodles. This quick dinner option is perfect for busy nights and pleases everyone at the table.


Ingredients

  • 16 ounces lasagna noodles (cooked according to package instructions)
  • 1 teaspoon kosher salt
  • 1 pound ground beef
  • 1 small yellow onion (diced)
  • 3 garlic cloves (minced)
  • 32 ounces marinara sauce
  • 1 tablespoon dried oregano
  • 1 tablespoon dried basil
  • 1 1/2 teaspoons kosher salt (or 3/4 teaspoon table salt)
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon red pepper flakes
  • 15 ounces ricotta cheese
  • 1 large egg (beaten)
  • 3 cups mozzarella cheese (shredded, divided)
  • 1/4 cup Parmesan cheese (shredded)
  • 2 tablespoons fresh parsley (chopped)

Instructions

  1. Preheat the oven to 375°F and prepare a 9 by 13 inch baking dish with cooking spray.
  2. In a large pot, boil water and add 1 teaspoon of kosher salt, cooking the lasagna noodles as specified on the package. Drain and set aside (you'll need 12 noodles, but cook the whole box for backups).
  3. In a large skillet over medium heat, brown the ground beef while breaking it up. Add in diced onion and minced garlic, cooking until the onion softens, about 3 minutes. Drain excess grease.
  4. Stir in marinara sauce, oregano, basil, salt, pepper, and red pepper flakes. Let the sauce simmer for 10 minutes.
  5. In a bowl, combine ricotta cheese, beaten egg, 1 1/2 cups of mozzarella cheese, Parmesan cheese, and parsley to make the cheese mixture.
  6. Pour 1/2 cup of sauce into the baking dish to cover the bottom.
  7. Lay the cooked noodles on a baking sheet, spreading about 1/4 cup of cheese mixture on each noodle followed by 1 tablespoon of meat sauce. Roll the noodles tightly and place them in the baking dish. You should get about 16 roll ups. Pour the remaining sauce on top and sprinkle with the remaining 1 1/2 cups of mozzarella cheese.
  8. Cover the baking dish with foil and bake for 30-35 minutes. Remove the foil and broil for a few minutes to brown the cheese.

Notes

For extra flavor, add chopped spinach to the cheese mixture.
Feel free to substitute ground turkey or chicken for a lighter option.
These roll ups can be made ahead of time and refrigerated before baking.
