- 4 tablespoons unsalted butter
- 3 garlic cloves minced
- zest of one lemon
- juice of one lemon
- 1/2 teaspoon kosher salt
- dash freshly ground black pepper
- 1/3 cup grated parmesan cheese
Instructions
- Boil a large pot of water and add salt. Cook the spaghetti according to package directions, reserving 1 cup of pasta water before draining.
- In a large skillet over medium heat, melt the butter. Add minced garlic and lemon zest, cooking until fragrant, about one minute. Stir in lemon juice, 1/2 cup of reserved pasta water, salt, and pepper, whisking to combine.
- Toss the drained spaghetti in the skillet. Add parmesan cheese and mix well. If needed, incorporate more reserved pasta water for a smoother sauce. Adjust seasoning with salt and pepper to taste.
Notes
For extra lemon flavor, increase the lemon zest.
This dish can be served warm or at room temperature.
