Description

These Linzer cookies are a delightful combination of toasted nuts, buttery dough, and sweet jam. Easy to make and perfect for holiday gatherings or a cozy treat anytime!


Ingredients

  • Almonds or Pistachios
  • Brown Sugar
  • All-Purpose Flour
  • Baking Powder
  • Ground Cinnamon
  • Salt
  • Unsalted Butter
  • Granulated Sugar
  • Egg
  • Pure Vanilla Extract
  • Jam or Preserves
  • Confectioners’ Sugar

Instructions

  • Prepare nut mixture by blending nuts and brown sugar in a food processor until finely crushed.
  • In a bowl, whisk together flour, baking powder, cinnamon, and salt.
  • Beat butter and sugar until creamy, then add egg and vanilla, mixing well.
  • Gradually mix dry and nut mixtures into the wet mixture until combined.
  • Chill the dough for at least 3 hours, wrapped in plastic.
  • Preheat oven to 350°F and line baking sheets.
  • Roll out dough, cut cookies and create cut-outs in half of them for jam-filled tops.
  • Bake cookies until golden on edges, about 10-11 minutes.
  • Cool on sheets, then assemble with jam in between.

Notes

Use room temperature butter for best results.
For gluten-free, substitute with a 1:1 gluten-free flour blend.
Store cookies in an airtight container at room temperature for up to 3 days.
