These Linzer cookies are a delightful combination of toasted nuts, buttery dough, and sweet jam. Easy to make and perfect for holiday gatherings or a cozy treat anytime!

- 1 cup ground almonds or pistachios
- 3/4 cup brown sugar
- 2 cups all-purpose flour
- 1 tsp baking powder
- 1/2 tsp ground cinnamon
- 1/4 tsp salt
- 1 cup unsalted butter, softened
- 1/2 cup granulated sugar
- 1 large egg
- 1 tsp pure vanilla extract
- 1/2 cup jam or preserves
- 1/4 cup confectioners' sugar
Instructions
- Prepare nut mixture by blending nuts and brown sugar in a food processor until finely crushed.
- In a bowl, whisk together flour, baking powder, cinnamon, and salt.
- Beat butter and sugar until creamy, then add egg and vanilla, mixing well.
- Gradually mix dry and nut mixtures into the wet mixture until combined.
- Chill the dough for at least 3 hours, wrapped in plastic.
- Preheat oven to 350°F and line baking sheets.
- Roll out dough, cut cookies and create cut-outs in half of them for jam-filled tops.
- Bake cookies until golden on edges, about 10-11 minutes.
- Cool on sheets, then assemble with jam in between.
Notes
Use room temperature butter for best results.
For gluten-free, substitute with a 1:1 gluten-free flour blend.
Store cookies in an airtight container at room temperature for up to 3 days.
