Ingredients

Scale
  • 2¼ cups flour
  • 2 tablespoons cornstarch
  • 2 teaspoons baking powder
  • 1¾ sticks butter (softened at room temperature)
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • ¼ teaspoon salt
  • 4 large eggs (at room temperature)
  • â…“ cup heavy cream
  • 3 tablespoons unsweetened cocoa powder
  • 1 tablespoon granulated sugar
  • 2 tablespoons heavy cream
  • powdered sugar or chocolate ganache

Instructions

  1. Preheat your oven to 350°F and line a 9×5-inch loaf pan with parchment paper.
  2. In a small bowl, whisk together the flour, cornstarch, and baking powder; set aside.
  3. Using a hand mixer, beat the softened butter until creamy. Add granulated sugar, vanilla, and salt; continue beating for 2–3 minutes until pale and fluffy.
  4. Incorporate eggs one at a time, mixing on high speed for 30–60 seconds after each addition.
  5. Gradually add the flour mixture and heavy cream alternately, mixing until smooth.

  7. Bake in the preheated oven for 55–60 minutes or until a toothpick inserted in the center comes out clean.
  8. Cool the cake in the pan on a wire rack for 10 minutes, then remove it and let it cool completely before serving. Dust with powdered sugar or top with chocolate ganache.

Notes

Ensure all ingredients are at room temperature for better mixing results.
For a richer flavor, consider adding a splash of coffee to the batter.
