- 1 cup orzo pasta, uncooked
- 3 cups beef broth
- 2 cups baby spinach

Instructions
- Brown ground beef and diced onion in a large skillet over medium heat for 8-10 minutes.
- Drain excess grease, leaving about a tablespoon; add garlic, salt, black pepper, onion powder, and crushed red pepper, cooking for 30 seconds.
- Add uncooked orzo to skillet, toasting for 1-2 minutes.
- Pour in beef broth, bringing to a gentle simmer.
- Lower heat, cover, and cook for 10-12 minutes, stirring occasionally until orzo is tender and liquid is absorbed.
- Stir in baby spinach and cook for an additional minute.
- Remove from heat; stir in mozzarella and cheddar until melted.
- Garnish with parsley and serve.

For a milder flavor, you can use shallots instead of onion.
