  • 1 cup orzo pasta, uncooked
  • 3 cups beef broth
  • 2 cups baby spinach
  • ¾ cup mozzarella cheese, shredded
  • ¾ cup sharp cheddar cheese, shredded
  • Fresh parsley, for garnish

Instructions

  • Brown ground beef and diced onion in a large skillet over medium heat for 8-10 minutes.
  • Drain excess grease, leaving about a tablespoon; add garlic, salt, black pepper, onion powder, and crushed red pepper, cooking for 30 seconds.
  • Add uncooked orzo to skillet, toasting for 1-2 minutes.
  • Pour in beef broth, bringing to a gentle simmer.
  • Lower heat, cover, and cook for 10-12 minutes, stirring occasionally until orzo is tender and liquid is absorbed.
  • Stir in baby spinach and cook for an additional minute.
  • Remove from heat; stir in mozzarella and cheddar until melted.
  • Garnish with parsley and serve.

Notes

For a healthier option, substitute ground beef with ground turkey or chicken.
For a milder flavor, you can use shallots instead of onion.
