Description

These Red, White, and Blue Tortilla Cups are a delectable treat featuring crisp tortilla cups filled with sweet whipped cream and topped with vibrant fresh berries. Easy to prepare, they make for a charming dessert or snack that’s perfect for gatherings!


Ingredients

  • 3 small flour tortillas
  • 2 tbsp. coconut oil, melted
  • 1 tbsp. honey
  • 1 tsp. ground cinnamon
  • 1 cup whipping cream
  • 1/2 tsp. natural sweetener like Truvia
  • 1 tsp. vanilla
  • 1 cup fresh berries (blueberries, raspberries, and strawberries)
  • Optional: cocoa powder

Instructions

  1. Preheat the oven to 375 degrees.
  2. Cut the tortillas into quarters using a pizza slicer.
  3. Mix the melted coconut oil and honey in a small bowl until well combined.
  4. Brush each tortilla quarter with the coconut oil mixture, then sprinkle with ground cinnamon.
  5. Place three tortilla triangles in a muffin pan to form a cup shape.
  6. Bake in the oven for 15 minutes, then remove from the pan and allow to cool completely.
  7. In a mixing bowl, combine the whipping cream, natural sweetener, and vanilla, then beat until small peaks form.
  8. Spoon or pipe the whipped cream into each cooled tortilla cup.
  9. Top the whipped cream with fresh berries of your choice.
  10. If desired, dust cocoa powder on top.

Notes

Ensure the tortillas are crispy by baking them properly; they should be golden brown.
Feel free to mix different types of berries to enhance the flavor and presentation.
