- 3 small flour tortillas
- 2 tbsp. coconut oil, melted
- 1 tbsp. honey
- 1 tsp. ground cinnamon
- 1 cup whipping cream
- 1/2 tsp. natural sweetener like Truvia
- 1 tsp. vanilla
- 1 cup fresh berries (blueberries, raspberries, and strawberries)
- Optional: cocoa powder
Instructions
- Preheat the oven to 375 degrees.
- Cut the tortillas into quarters using a pizza slicer.
- Mix the melted coconut oil and honey in a small bowl until well combined.
- Brush each tortilla quarter with the coconut oil mixture, then sprinkle with ground cinnamon.
- Place three tortilla triangles in a muffin pan to form a cup shape.
- Bake in the oven for 15 minutes, then remove from the pan and allow to cool completely.
- In a mixing bowl, combine the whipping cream, natural sweetener, and vanilla, then beat until small peaks form.
- Spoon or pipe the whipped cream into each cooled tortilla cup.
- Top the whipped cream with fresh berries of your choice.
- If desired, dust cocoa powder on top.
Notes
Ensure the tortillas are crispy by baking them properly; they should be golden brown.
