These Ritz Peanut Butter Cookies combine buttery crackers, smooth peanut butter, and rich chocolate for an irresistible treat that’s quick and easy to make—perfect for all occasions!
Ingredients
- Ritz crackers
- Creamy peanut butter
- Milk chocolate melting wafers
- White chocolate melting wafers
- Coconut oil
Instructions
- Prepare a parchment-lined baking sheet for the sandwiches.
- Spread 1 teaspoon of peanut butter on one Ritz cracker and top with another cracker to make a sandwich. Repeat until 24 sandwiches are formed.
- Chill the sandwiches in the freezer for 10-15 minutes.
- Melt the milk and white chocolate melting wafers with coconut oil in separate bowls, microwaving in 30-second bursts until smooth.
- Dip each sandwich in the melted chocolate, coating well and tapping off excess. Place them back on the parchment sheet and add sprinkles if desired.
- Refrigerate the dipped sandwiches for 15-20 minutes until the chocolate hardens.
Notes
Store in an airtight container at room temperature for up to three days.
Refrigerate for up to a week or freeze for up to three months.
For thicker chocolate coating, double dip after the first coat has set.
