Ingredients

  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp ground cinnamon

  • 3/4 cup unsalted butter, softened
  • 1 cup dark brown sugar, packed
  • 1/2 cup white granulated sugar
  • 1/2 cup molasses
  • 1 large egg
  • 1 tsp pure vanilla extract
  • 1/2 cup unsalted butter, softened (for frosting)
  • 8 oz cream cheese, softened
  • 2 cups powdered sugar
  • 1 tsp pure vanilla extract (for frosting)
  • a few drops brown gel food dye

Instructions

  • Sift together flour, baking soda, salt, and spices in a bowl; set aside.
  • Cream butter, dark brown sugar, and granulated sugar until fluffy.
  • Mix in molasses, egg, and vanilla until well combined.
  • Gradually add dry ingredients to the wet mixture; mix until just combined.
  • Scoop dough, roll in sugar, and chill for at least 30 minutes.
  • Preheat oven to 350°F (175°C) and bake dough balls for 14-16 minutes.
  • Cool on a wire rack before decorating with frosting.

Notes

Ensure butter and egg are at room temperature for best texture.
Chill cookie dough to prevent over-spreading while baking.
Store cookies in an airtight container at room temperature.
