- 1½ pounds chicken breasts
- 1/4 cup avocado oil
- 3 tablespoons lime juice
- 1 tablespoon garlic, minced
- 2 tablespoons light brown sugar
- 1 teaspoon chili powder
- 1/2 teaspoon cumin
- 1/4 teaspoon cayenne powder
- 1 each chili in adobo sauce, seeds removed and minced
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 whole lime
Instructions
- Trim excess fat from the chicken breasts and place them in a freezer bag or between plastic wrap.
- Pound the thick parts of the chicken lightly using a meat tenderizer or rolling pin.
- In a small bowl, mix avocado oil, lime juice, minced garlic, brown sugar, chili powder, cumin, cayenne, and minced chili in adobo sauce until well combined.
- Pour the marinade over the chicken, ensuring it coats all sides evenly.
- Seal the bag or cover the bowl, then refrigerate the chicken to marinate for at least 2 hours or up to 24 hours.
Notes
For maximum flavor, marinate the chicken for longer if possible.
This dish can be grilled or baked for a healthier option.
Serve with lime wedges for extra zest.
