Description

Southwest Chicken Breasts are packed with flavor and super easy to make. Marinated in a zesty combination of lime juice, garlic, and spices, this dish is perfect for a quick dinner or a healthy meal that doesn’t sacrifice on taste.


Ingredients

  • 1½ pounds chicken breasts
  • 1/4 cup avocado oil
  • 3 tablespoons lime juice
  • 1 tablespoon garlic, minced
  • 2 tablespoons light brown sugar
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • 1/4 teaspoon cayenne powder
  • 1 each chili in adobo sauce, seeds removed and minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 whole lime

Instructions

  1. Trim excess fat from the chicken breasts and place them in a freezer bag or between plastic wrap.
  2. Pound the thick parts of the chicken lightly using a meat tenderizer or rolling pin.
  3. In a small bowl, mix avocado oil, lime juice, minced garlic, brown sugar, chili powder, cumin, cayenne, and minced chili in adobo sauce until well combined.
  4. Pour the marinade over the chicken, ensuring it coats all sides evenly.
  5. Seal the bag or cover the bowl, then refrigerate the chicken to marinate for at least 2 hours or up to 24 hours.

Notes

For maximum flavor, marinate the chicken for longer if possible.
This dish can be grilled or baked for a healthier option.
Serve with lime wedges for extra zest.
