- ¾ cup fresh or frozen spinach
- ½ cup ricotta cheese
- ⅓ cup grated parmesan cheese
- ¼ teaspoon grated fresh garlic
- 2 tablespoons breadcrumbs
- ¾ teaspoon salt
- ⅛ teaspoon black pepper
- 1 sheet puff pastry
- 1 egg, beaten
- 1 tablespoon poppy or sesame seeds
Instructions
- Thaw or blanch spinach, drain, and chop.
- Mix together spinach, ricotta, parmesan, garlic, breadcrumbs, salt, and pepper.
- Roll out puff pastry and cut in half.
- Divide filling between the two pieces and roll into logs.
- Freeze logs for about an hour.
- Preheat oven to 400℉ (200℃) and line a baking sheet.
- Slice the logs into 1.3-inch pieces.
- Brush with beaten egg and sprinkle with seeds.
- Bake for 25 minutes until golden and crisp.
Notes
Use fresh spinach for better flavor; drain and chop well if using frozen.
Adjust garlic and salt according to taste before baking for preferred flavor.
