Description

These Spinach Puff Pastry Appetizers feature a creamy filling of ricotta and parmesan, enveloped in flaky puff pastry. Perfect for gatherings or cozy nights in!


Ingredients

Scale
  • ¾ cup fresh or frozen spinach
  • ½ cup ricotta cheese
  • ⅓ cup grated parmesan cheese
  • ¼ teaspoon grated fresh garlic
  • 2 tablespoons breadcrumbs
  • ¾ teaspoon salt
  • ⅛ teaspoon black pepper
  • 1 sheet puff pastry
  • 1 egg, beaten
  • 1 tablespoon poppy or sesame seeds

Instructions

  • Thaw or blanch spinach, drain, and chop.
  • Mix together spinach, ricotta, parmesan, garlic, breadcrumbs, salt, and pepper.
  • Roll out puff pastry and cut in half.
  • Divide filling between the two pieces and roll into logs.
  • Freeze logs for about an hour.
  • Preheat oven to 400℉ (200℃) and line a baking sheet.
  • Slice the logs into 1.3-inch pieces.
  • Brush with beaten egg and sprinkle with seeds.
  • Bake for 25 minutes until golden and crisp.

Notes

Use fresh spinach for better flavor; drain and chop well if using frozen.
Adjust garlic and salt according to taste before baking for preferred flavor.
Freeze unbaked logs for a quick appetizer any time.
