Ingredients

  • 2 Tablespoons olive oil
  • 2 Tablespoons lime juice
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • ½ teaspoon smoked paprika
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • 2 cups jasmine rice, cooked
  • 1 Tablespoon olive oil or butter
  • Zest of 1 lime
  • 2 Tablespoons fresh lime juice
  • ¼ cup fresh cilantro, chopped
  • Salt to taste
  • Diced avocado
  • Chopped tomatoes
  • Thinly sliced red onion
  • Fresh cilantro
  • Lime wedges
  • ½ cup sour cream
  • 2 Tablespoons lime juice or Greek yogurt
  • Pinch of salt
  • Splash of water to thin, only if needed

Instructions

  1. In a bowl, whisk together olive oil, lime juice, minced garlic, ground cumin, chili powder, smoked paprika, salt, and black pepper.
  2. Add the flank steak to the marinade and let it sit for at least 30 minutes, or up to 8 hours for enhanced flavor.
  3. Heat a cast-iron skillet or grill pan over high heat and sear the steak for 3 to 4 minutes per side until well charred and cooked to your liking.
  4. Allow the steak to rest for 5 minutes before slicing thinly against the grain.
  5. In another bowl, fluff the cooked jasmine rice with olive oil, lime zest, fresh lime juice, chopped cilantro, and a pinch of salt. Adjust seasoning to taste.
  6. Prepare the yogurt drizzle by mixing the sour cream, lime juice or Greek yogurt, and a pinch of salt in a small bowl. Add a splash of water to thin if necessary.
  7. To assemble, layer warm rice in serving bowls, top with sliced steak, and add desired toppings such as diced avocado, chopped tomatoes, sliced red onion, and fresh cilantro. Finish with a squeeze of lime juice and drizzle the creamy sauce on top.
