Description

This Black Bean and Corn Salsa is a crowd-pleaser with its fresh flavors and simple preparation. Loaded with wholesome ingredients, it’s perfect for gatherings and a quick, healthy snack.


Ingredients

  • 15 ounces black beans, drained and rinsed
  • 15 ounces corn, drained
  • 1 medium tomato, diced
  • 1 jalapeño, seeds and ribs removed and diced
  • 1/4 red onion, diced
  • 2 garlic cloves, minced
  • 2 tablespoons lime juice
  • 1 tablespoon olive oil
  • 2 tablespoons minced fresh cilantro
  • 1/2 teaspoon cumin
  • 1/2 teaspoon kosher salt or 1/4 teaspoon table salt
  • dash freshly ground black pepper

Instructions

  1. In a large bowl, add the black beans, corn, tomato, jalapeño, red onion, garlic, lime juice, olive oil, cilantro, cumin, salt, and pepper.
  2. Stir all ingredients together until well combined.
  3. Taste the salsa and adjust salt and pepper as needed.

Notes

Feel free to adjust the spice level by adding more jalapeño or hot sauce if desired.
This salsa can be served immediately but tastes even better after chilling in the refrigerator for an hour to let flavors meld.
Perfect as a dip with tortilla chips or as a topping for grilled meats.
