Description

Ingredients

  • 6 large eggs (room temperature)
  • 1 cup granulated sugar
  • 1 cup all purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon ground cinnamon
  • 4 ounces cream cheese (room temperature)
  • 4 ounces mascarpone cheese (cold)
  • 1 cup butter (room temperature)
  • 5 cups powdered sugar
  • 1 teaspoon pure vanilla extract
  • 1/4 cup strongly brewed coffee or espresso
  • 1/4 cup unsweetened cocoa powder (for garnish)

Instructions

  1. Preheat the oven to 350°F. Grease three 6-inch round cake pans and line with parchment paper.
  2. In a stand mixer, beat eggs on medium-high speed and gradually add sugar, beating until the batter reaches ribbon stage (5-8 minutes).
  3. Sift in flour, baking powder, and cinnamon, gently folding into the egg mixture.
  4. Divide the batter among the pans and bake for 15-18 minutes or until a toothpick comes out clean.
  5. Let the cake layers cool in the pans for 10 minutes before turning them out onto wire racks to cool completely.
  6. Optional: Wrap cooled layers in plastic wrap and freeze for at least 4 hours before assembling.
  7. For the frosting, beat cream cheese, mascarpone, and butter until smooth, then slowly add powdered sugar before mixing in vanilla extract until fluffy.
  8. Brush cooled cake layers with espresso before assembling: spread frosting between layers and on top.
  9. Decorate the cake as desired, then refrigerate loosely covered for 4 hours before serving.

Notes

Freezing the layers is optional but helps with stability for frosting.
Make sure all dairy ingredients are at room temperature for best results.
Use high-quality espresso for a richer flavor.
