- 1 cup butter (room temperature)
- 5 cups powdered sugar
- 1 teaspoon pure vanilla extract
- 1/4 cup strongly brewed coffee or espresso
- 1/4 cup unsweetened cocoa powder (for garnish)
Instructions
- Preheat the oven to 350°F. Grease three 6-inch round cake pans and line with parchment paper.
- In a stand mixer, beat eggs on medium-high speed and gradually add sugar, beating until the batter reaches ribbon stage (5-8 minutes).
- Sift in flour, baking powder, and cinnamon, gently folding into the egg mixture.
- Divide the batter among the pans and bake for 15-18 minutes or until a toothpick comes out clean.
- Let the cake layers cool in the pans for 10 minutes before turning them out onto wire racks to cool completely.
- Optional: Wrap cooled layers in plastic wrap and freeze for at least 4 hours before assembling.
- For the frosting, beat cream cheese, mascarpone, and butter until smooth, then slowly add powdered sugar before mixing in vanilla extract until fluffy.
- Brush cooled cake layers with espresso before assembling: spread frosting between layers and on top.
- Decorate the cake as desired, then refrigerate loosely covered for 4 hours before serving.
Notes
Freezing the layers is optional but helps with stability for frosting.
Make sure all dairy ingredients are at room temperature for best results.
