- 1½ cups room-temperature water
- 2–3 tablespoons honey
- 1 teaspoon active dry yeast
- 3 cups bread flour or all-purpose flour
- 1 teaspoon kosher salt
- 1 teaspoon ground cinnamon
- ¾ cup dried cranberries
- ½–¾ cup raisins
- ½ cup chopped walnuts
Instructions
- Stir together room-temperature water and honey, then sprinkle the active dry yeast on top and let it foam for 5-10 minutes.
- Combine bread flour, kosher salt, ground cinnamon, dried cranberries, raisins, and chopped walnuts in a bowl.
- Add the foamy yeast mixture to the dry ingredients and mix until a shaggy dough forms.
- Cover the bowl tightly with plastic wrap and let rise in a warm spot for 8–10 hours.
- Turn out the dough onto a floured surface, shape it into a round loaf, and place it in the refrigerator overnight.
- Preheat your Dutch oven to 450°F (232°C) about 30 minutes before baking.
- Remove the pot, place the dough with parchment inside, score the top, cover, and bake for 30 minutes.
- Remove the lid and continue baking for 15-20 minutes until golden brown.
- Cool in the pot for 10 minutes, then transfer to a wire rack to cool completely.
Notes
Store bread wrapped in a towel or in a bread box for up to 3 days.
Slice and freeze for up to 3 months; reheat slices in a toaster or oven for best texture.
