Description

Ingredients

  • 1 1/2 cups organic all-purpose flour
  • 3/4 cup organic cane sugar
  • 1/2 cup vegan butter
  • 1/4 cup almond milk
  • 1 tbsp apple cider vinegar
  • 1/2 tsp sea salt
  • 1 tsp ground cinnamon
  • 4 cups organic apples, peeled and sliced
  • 1 cup whole cranberries
  • 2 tbsp cornstarch
  • 1/4 tsp ground nutmeg
  • 1/4 tsp allspice
  • 1 tsp vanilla extract
  • 1 cup rolled oats

Instructions

  • Preheat oven to 375°F.
  • Combine almond milk and apple cider vinegar; let rest for 5 mins.
  • Whisk together flour, sugar, salt, and cinnamon in a bowl.
  • Mix in cold vegan butter until coarse crumbs form.
  • Pour in almond milk mixture; stir until combined and refrigerate for 1 hour.
  • Mix sliced apples and cranberries with sugar, cornstarch, and spices; set aside.
  • Prepare crumble by mixing flour, oats, sugar, and butter until crumbly.
  • Roll out the chilled dough and place in a pie dish, pre-bake for 10-15 mins.
  • Fill crust with the apple-cranberry mixture and sprinkle crumble on top.
  • Bake for 45-60 mins until golden; cool completely before serving.

Notes

Chill the pie for at least 4 hours or overnight for best flavor.
Use cold ingredients for a flaky crust.
Store leftovers in an airtight container for up to 5 days.
