Ingredients

Scale
  • 2 cloves garlic
  • 1 tablespoon balsamic vinegar
  • â…“ cup olive oil
  • ¼ cup sun dried tomatoes, chopped (and drained from olive oil)
  • 3 tablespoons almond milk
  • ¼ teaspoon salt
  • â…› teaspoon ground black pepper
  • 2 tablespoons pasta water
  • 8 oz. whole wheat linguine
  • ½ tablespoon olive oil
  • ½ yellow onion, thinly sliced
  • ½ cup fresh basil, chopped

  • ¼ cup freshly grated parmesan cheese

Instructions

  1. Cook linguine pasta according to the package directions, reserving one cup of pasta water. Set strainer aside.

Notes

For creaminess, use almond milk or regular milk.
Feel free to adjust the amount of sun-dried tomatoes to suit your taste.
This dish works well as a cold pasta salad or a warm meal.
